    Make milk kefir at home with kefir grains!

    A tablespoon of kefir grains is enough to ferment 250ml-400ml of kefir. Fermentation time varies from 8 hours to 24 hours.

    Ingredients

    Kefir Grains

    Upon receiving your kefir grains, store them at 4°C until you are ready to make your first batch of kefir. Do not leave your kefir grains for more than 1 week in the refrigerator without making milk kefir. The first few batches of kefir after a period of storage might take longer to ferment and taste different. To grow your kefir grains faster and to make the best tasting milk kefir, make kefir everyday.

     

    Milk

    The health of your kefir grains is directly related to the quality of milk you use to make milk kefir. For best results, use fresh, full-cream pasteurized milk. Avoid using packaged UHT milk, as it may not make the best tasting kefir and might harm your kefir grains. Do not heat the milk before making kefir. Kefir grains do not survive in high temperatures (>30°C).

     

    Instructions

    1. In a large jar, pour 250ml-400ml of cold or room temperature milk.

    2. Mix in a tablespoon of kefir grains

    3. Cover with a cloth and leave to ferment for 8 to 24 hours or until you see the milk separating.

    4. Remove the cloth and gently whisk for a few seconds.

    5. Pour the milk kefir through a strainer into a cup, using a spoon or a spatula to aid the straining.

    6. Cool the milk kefir before drinking.

    7. Put the kefir grains back into the jar and repeat for another batch, or cover with a little milk and store in the refrigerator for not more than a 5-6 days.
